How much fun would getting from A(partment) to B(each) be on a cruiser bike?

Plus, riding one would be the best exercise, and yet wouldn’t feel like a workout at all. What’s not to love about that?!

… Chobani yogurt yet? You really should, it really is quite delicious.

I was lucky enough to be sent some to sample by the lovely people from Chobani, when it launched in Australia, and I’m now a huge fan (so is my husband, which means it never lasts long in the fridge!)

Health Tip of the Day

Here’s another reason, or three, to make sure you always drink plenty of water and avoid dehydration.

A study published in The Journal of Nutrition found even mild dehydration may affect your mood, increase fatigue, and lead to headaches.

So, this weekend put a spring in your step, avoid a headache and boost your mood by downing a big glass – or eight – of H2O!

New year, new you?

I’m not always the best at practising what I preach. For (cough) two years now I have been absent from all pump classes, yoga sessions and spin studios. I did walk – occasionally… sometimes… okay, not very often!

But, the good news is, I am now the owner of a brand spanking new gym membership. And I love it.

I love going, I love the way I feel when I walk out, I love that it’s a small, women’s only gym, where everyone is super friendly, and for a mere $16 {one of the things that was putting me off re-joining a gym was cost, what was I worried about, it’s cheaper than buying a coffee Monday to Friday!} a week I have more energy, feel happier and more motivated, and its kick-started a healthier way of eating. Bonus!

An egg-cellent idea

Hungry, but can’t wait until your next meal? Feed your rumbling tummy without over-indulging by choosing a snack that’s roughly 100 calories (420kJs).

What’s a good snack choice? Hard-boiled eggs are ideal.

That’s because one large hard-boiled egg (50g) has just 57 calories (240kJs), and close to 6 grams of protein (the good stuff that keeps you feeling fuller for longer).

You have to try this… Chermoula chicken with chickpea salad

If, like me, you are always on the hunt for a new salad to add to your culinary repertoire you need to give this one from the Women’s Weekly a go.

Best bits: It’s quick, foolproof, healthy and perfect as a main – guaranteed you won’t be hungry after having this for dinner.

INGREDIENTS

1 cup dried chickpeas (Shortcut: I used canned Chickpeas – cuts down on the cooking time)
4 chicken breasts
1 medium red capsicum, chopped finely
1 medium green capsicum, chopped finely
2 large egg tomatoes, chopped finely
1 small white onion, chopped finely
2 tablespoons lemon juice
Chermoula
½ cup fresh coriander, chopped finely
3 cloves garlic, crushed
2 tablespoons white wine vinegar
2 tablespoons lemon juice
1 teaspoon sweet paprika
½ teaspoon ground cumin
2 tablespoons olive oil

METHOD

[If you use  dried chickpeas] Place chickpeas in large bowl of cold water and soak overnight. Before cooking, drain and rinse under cold running water. Cook chickpeas, uncovered, in medium saucepan of boiling water until just tender; drain and rinse again under cold running water.

Meanwhile, combine ingredients for chermoula in large bowl; reserve half of the chermoula for chickpea salad. Place chicken in bowl with remaining half of the chermoula; turn chicken to coat in chermoula.

Cook chicken, in batches, on heated oiled grill plate (or grill or barbecue) until cooked through. Cover to keep warm.

Place chickpeas in large bowl with capsicums, tomato, onion and remaining chermoula; toss gently to combine.

Serve chickpea salad with sliced chicken, drizzled with lemon juice.

Serves 4

Top Tip: If you have any leftovers, scoop them onto a wholegrain wrap, add a slice of avocado, a small splash of mayonnaise, roll-up and enjoy for lunch! Delish!
